Dee’s Omega Burger, Avocado and Pineapple Tacos with Cuban Corn

Perfect for sharing, these Cuban-inspired tacos really pack a punch. Creamy avocado, peppery watercress and zingy sweet pineapple combined with Dee’s delicious Omega burgers, hot chipotle and homemade pickle, makes for total foodie bliss. A perfect meal to get the whole family around the table, let everyone have fun assembling their own taco.

For the Pickled Radish

1Finely slice the radish (using a mandolin if you have one), place in a bowl with the vinegar, water, salt and sugar, stir and set aside.
2In a small bowl mix together the chipotle sauce and fresh red chili and set aside.
3Preheat the oven to 200ºC. Line a baking tray with parchment paper and place the burgers on top. Cook for 20 minutes until golden and crispy, turning once halfway through.
4For the filling, mix together the avocado chunks, pineapple pieces, watercress and lime juice. Season well with a little salt and a lot of pepper and set aside. Place a small pan of water on to boil. Add the corn and boil for 5 minutes and then drain on kitchen paper. Heat a grill pan and place the pieces of corn in the pan until they become slightly charred. On a small plate stir the cayenne pepper and parmesan (or vegan cheese) together. Roll the hot corn on the cobs in the spicy cheese mixture and serve with fresh lime
5To serve the tacos, warm the wraps in a grill pan, cut the burgers into thin slices and serve everything together with the pickled radish and spicy chipotle sauce so everyone can help themselves.
