This is a stacked vegan club sandwich made with creamy hummus and crispy vegetable crisps. The combination of flavours and textures is gorgeous and is a handy go to dish for a healthy lunchbox

Ingredients

Sourdough Bread

Fresh Basil Leaves

Carrot Hummus

1 bag of Joe's Farm Root Vegetable Crisps or any other vegetable crisp.

Walnut and Lentil Pate

Green Olives, Sliced (or a green olive tapenade)

Directions

1Slice the bread. Place 2 basil leaves on each slice. Spread the carrot hummus on top. Top with a few beetroot crisps. Spread the walnut and lentil pate on top. Add the sliced olives. Top with some parsnip crisps. Enjoy!
